I dont know if some variants were not exported to Germany, but every pre-1979 Mustang should have secondary name Ford T5

But was the Mustang always officially available in Germany, or was it only available via export?

First it was an unofficial export, but Ford USA later supported it. This is only for 1964-1979 model years. We had an argument on German Wikipedia right about that topic.

The Mach 1 was not exported, only the standard cars.

Oh, I added T5 Mach 1 because of this brochure: oldcarbrochures.org/var/albums/NA/Ford_%20Mustang/1971_Ford_Mustang/1971-Ford-T5-%28Export%29/1971%20Ford%20T5-02-03.jpg?m=1328639520
But I can be wrong, after all, you are German, not me :)
